When you buy a USB drive (Sandisk USB 2 thumb drive, let's say), what filesystem does it ship with as default?

I know this might be weird but I am trying to restore a regular usb thumb drive from Sandisk to factory settings, but I am not sure which FileSystem should I format it to. What is the default/shipped from factory

You should format it as FAT32.

Most likely ExFAT https://ro.wikipedia.org/wiki/ExFAT ... if it's 32 GB or less, probably FAT32 as it would be most compatible with Linux and Windows. 

 

(Windows doesn't let you format with FAT32 usb sticks bigger than 32 GB from the application with interface, but you can do it from command line) 

 

FAT32 also has the limitation of maximum 4 GB file sizes. so keep that in mind if you wish to put movies on usb stick.
