What GPU should I get?

Games, programs or workloads that it will be used for: Mainly gaming with a bit of modeling and game development

Other details: I've been looking at some GTX 1070 but I was wondering if there is another GPU that could be better for 1080p 60-120fps gaming.

A 1070 would be fine, but you have options.

 

If you are near a micro center you can get an open box RX 6600 for a little more and it'll be essentially brand new and returnable (most of the open box cards are scalpers returning unopened, unsold merchandize AFAIK) It's  also faster, uses less power and generally runs cooler.

 

Otherwise, on eBay the 1080ti is gonna be a little more but it's notably faster.  Check facebook marketplace and craigslist in your area as well.

U can also look for RX580 8GB and GTX1660.
