AsRock RX 6500 XT 4GB Phantom Gaming D good?

Well, like the title said, is it good? I mean compare to Gigabyte Eagle or Gaming OC or the MSI Mech 2X OC?

 

Anyway, the games that is going to play are Overwatch in 1080p 60Hz Medium setting and Genshin Impact Medium 1080p 60Hz. Is it capable?

Yes both games should run fine, check this out, depends on CPU also of course:
