PCIe 4 General lane?

So for my build i went with quite a beefy RAM and CPU. My choice was 5600x and a Corsair 32GB (2x16GB) DDR4 3600MHz CL16 Vengeance.

So my question is should I go with a X570 instead of a B550 because the X570 genral lane is PCie 4?

It matters only if you're planning to put high bandwidth devices like a pcie 4 ssd / multiple pcie 3 ssd's in the chipset lanes and need them all at full speed at the same time. Still chipset lanes will be limited / shared by a 4x lane to the cpu though.

The only real advantage to X570 over B550 is the increased connectivity. X570 supports more USB 3 ports/headers and more of them can be 10Gbps. It has more PCIe lanes from the chipset and those lanes are Gen 4. If you want to use multiple Gen 4 NVMe drives at full speed, X570 is the only choice for AMD.

If you want more connectivity for devices, then X570 can make sense. Otherwise, you're paying extra for features you don't need.
