TPLink Omada, couple questions, probably messed up.

I am a novice at networking and I probably buy appliances that I shouldn't be.

 

I bought the following a few months back:
- TPLink TL-R605
- 2x TPLink EAP 225
- TPLink OC 200
- TPLink TL-SG1008P V4

 

I did not adopt the Controller, I did adopt the APs.
Should I adopt the Controller? I heard you may lose some functionality if you do that?

My main issue right now:
- While logged into the Controller, I'm trying to create a new VLAN wireless network that can get out to the internet as I want to separate my work laptop from the rest of the network.
- When trying to create a new network, the only option I get is to create a new VLAN network, I can't create a new Interface.

Help.
