Found it! I had thought it was a recent video but turned out to be a stream from 2019 lol (he talks about the game starting at 1:21:40) -

Hey all, I recently watched an LTT video in which Linus recommended a JRPG game he had been playing and even said he thought it might be better than FFVI/FFVII. Does anyone out there know which game he was talking about? Thanks a ton in advance for your help!

Thanks for the reply, but no that's not it for sure. It sounded like it was a newer game but more retro in its design and gameplay

FYI I ended up getting the game on Playstation and it's a blast. Highly recommend it for anyone nostalgic for Super Nintendo RPGs
