What Linux is best for this laptop?

Mx Linux is very good but considering you are new to Linux I’d suggest Xubuntu or Lubuntu, as they have a more user friendly setup. Mx is good though.

My Latitude 3189 just can't keep up with Windows, so I'm looking for a good Linux. I mainly use it for watching Youtube, browsing Reddit and use Word (I'm fine with alternatives like Libreoffice or Openoffice). I don't need anything fancy, just want this thing to be a bit faster.

Try out Lubuntu. It’s very, very resource efficient.

I actually prefer Xubuntu. It looks much nicer, still resource friendly and is easier to use.

It doesn't show my USB in the boot options, do you know how I can fix it? I made the USB with Rufus

Did you make it in ISO mode or DD mode. Some Linux ISO’s need to be made in DD mode to boot.

I think it was ISO mode. But I managed to fix it, I manually added the boot option in the BIOS which seems to work.

I'd also look into something like Kubuntu. Doesn't seem to run notably worse than Xubuntu on my E4310 but it looks miles nicer.
