How hungry is a stock 5800X?

the 8 pin is enough for the 5800X, the thing that matters more is the VRM's. You can take a look at the motherboard tier list on this forum and see which motherboard is suitable for up to what CPU. As you can see the B550 Aorus Elite is a tier A and it can handle up to a 5950X so the 5800X should be more than fine.

Motherboard tier list

 

For my new build, I'm planning on pairing a 5800X with this board. I'm not too familiar with the power draw this chip hits when boosting, so is it safe to just have the standard 8pin, or is 12pin recommended? I don't imagine a stock chip would need that kind of headroom, but I just want to be sure.

If you don't know you need it, you don't need it. 8 pin EPS is fine for 99% of situations.
