What's the max safe temp for a 10400F?

You should be able to change the fan curve in the bios. You can adjust it from their to fit your liking on noise to performance. I would go for it to be around 65c while gaming, but it is completely up to you

Max temp is 100c. 50c while gaming is actually pretty good.

TJUNCTION max temperature for the i5-10400F is 100 oC. You're far from 100 oC so I wouldn't worry about it, and it being a locked processor as well.

Thanks, I know 50 is good, but the cooler can get loud so I want to adjust the fan for it to be quieter. But I don't know what would be the max temp I should allow it to reach.
