It's it worth it to upgrade from an i5-7500

Budget (including currency): 500-700 USD but this isn't a big concern, but cheaper is better

Games, programs or workloads that it will be used for: Cyberpunk, watchdogs legion, resident evil village, other AAA games and VR

Hello! I've been thinking about upgrading my CPU, however, I'm currently using an i5-7500 and with my current motherboard, it looks like the best CPU I can get that is compatible is the i7-7700k, even though I have a non-overclocking board.

So, it seems the i7-7700K would not give much performance boost for the cost, so I was thinking about switching to Ryzen, a Amd Ryzen 7 5800X to be exact, but was wondering if there would be a better upgrade path for me.

So I was wondering 1) How does this upgrade look? And Is there anything I could do differently? 2) Should I wait until the next release of CPU's to upgrade to the current gen for cheaper? 3) Would my current PSU (550 Watt 80+ Gold) still be able to support the upgrade to Ryzen, according to PC part picker it would but, I want to be sure. 

Lastly, if I did upgrade to the Ryzen 7 5800X it looks like it would cost right around $690.00

For gaming alone on a 1080 Ti, I'd reccomend the Ryzen 5 5600X. Other than that, seems reasonable.

Do you live in the USA? Newegg has the 5800x for below MSRP with a 360mm aio (wow that's a good deal)
