Is a ryzen 5 3600 enough?

I  am planning to build a pc with the ryzen 5 3600, 16gb 3200mhz cl16, and 3060 ti. So I can play games like Minecraft, Doom Eternal, Fortnite, Apex Legends, Valorant, and I would want to make things in Blender. Would the 3060 ti and 3600 be enough?

I would suggest a 5600x over the 3600, it would be faster in games and Blender rendering.

I would suggest an 11400(f), its cheaper and better.

How much faster because this is a budget build I also want to get a keyboard and mouse. And currently the total with keyboard and mouse is 1350.

The 3600 will work just fine then.  It couldn't hurt to look into the i5-11400 like @davemc suggested.

I cannot find a cheap ATX motherboard for intel any suggeestions?

For the games you play, do consider 5600x because it's 10-20% faster than a 3600x in single core performance

If I wanted to overclock the gpu and cpu would I need a AIO and 750w psu?

Nah

And I wouldn't recommend you try overclocking the 3600 anyways, not much headroom
