So I am planning to fill my two m.2 slots with 2x 1tb pcie gen4 m.2 and not have any other drives, would that be ok? If not I can get a 2.5” ssd but I’d prefer not to have any hdd.

If you have the budget for it and that's all the storage you need, that's totally fine.

Just remember that usually, using M.2 slots will disable certain SATA ports, so watch out for that if you plan to add a large HDD for archival use.

*Most of the time.

With some motherboards (such as X570) SATA ports are not disabled.
