Workstation build (heavy graphic design and video editing) - can't decide on GPU

Games, programs or workloads that it will be used for: Mainly Adobe Suite, alot of illustrator, Indesign, and Premiere Pro. It's mainly for work. Won't really be gaming much at all, maybe the new COD once a month with a friend or something.

This will be my first build, currently just using an Acer Nitro laptop. I want the ability to have multiple large files of Illustrator, and Indesign at the same time without lag. This is what I have so far. I cannot decide on a GPU, should I just grab a used 1660ti or something.

PS - regarding the monitor, i'll be getting this (https://www.dell.com/en-ca/shop/dell-27-4k-uhd-monitor-s2721q/apd/210-axlf/monitors-monitor-accessories) instead of the LG 4k one. But, couldn't pick that in partpicker, so just chose one with a similar price.
