I hate my new build and I don't know why.

Budget (including currency): $2500-3000 USD

Country: USA

Games, programs or workloads that it will be used for: RT Titles (Namely Metro Exodus, RTX Minecraft, Cyberpunk 2077), CPU Heavy Titles (Civ 6), Some E-Sports(LoL, Starcraft II), and I am a big fan of single player experiences  such as DOOM, Fallout(w/ mods), Witcher III, etc. Also a decent chance I might do some engineering oriented CAD(Solid works, Creo Parametric), fluids(Fluent[lol, no, too rich for my blood], Open Foam) but likely more as a hobby and less for work. If I need to do stuff for work I can just have them get me a machine.

Hardware:
CPU: Ryzen 9 5900x (actually have)
GPU: Asus Strix RTX 3080/3080ti (Can't buy)

Motherboard: Asus ROG Strix X570-E (Will not be using Wifi, but the X570-f was sold out so FML)
Memory: G-Skill Trident Z (vanilla) 4x8(32GB) 3600Mhz
CPU Cooler: Corsair H150i Elite Capellix

PSU: Asus Strix 750 W Gold+
Nvme 1: Samsung 980 Pro 1TB
Nvme 2: Samsung 970 Evo 250GB

HDD: WD Blue 1TB
Case: Corsair iQUE 4000x

Display:

Monitor: 2 x Dell S2417DG
Resolution: 2560x1440

Panel Type: TN

Refresh Rate: 165hz

Response Time: 1ms
VRR: G-Sync

Peripherals:

Headset: Astro A50 Gen 3
Mouse: Logitech G703 Lightspeed
Keyboard: Razer Black Widow Chroma V2 (Orange)

VR Headset: Oculus Rift (Rarely Used)

GPU Problems:
Like everyone else I can't snag one right now, and I will be damned if I give anything to scalpers so I guess I will be waiting. At this point if there rumors of the 3080ti are true and they end up dropping in January I will be getting one of those instead... and probably upgrading to an 850W

Long Term PC Use:
When this is eventually retired, I would like to turn it into a server for me an a few friends. Games I have in mind are Space Engineers, 7 Days to Die, Ark Survival, Minecraft, and who knows what might show up by then. To be clear, I wouldn't be trying to do all of those at once, just one game at a time for probably between 2 and 6 people.

Why Do I Hate It?:

My gut says there is a giant stupid bottleneck somewhere in this and I don't know where. Other than minor nit picks like "the RAM can be slightly better" or "TN panel? Gross!", I don't think it is awful, but I can't put my finger on why I am uncomfortable with it. Anyone have any thoughts?

Other than the TN panel uhhh... yeah there's nothing awful about that rig that I can see. And if those are good TN panels vs shitty ones, they aren't awful either.

Monitors are fine for now. I like the 24" size with 1440, and as far as panel quality, I haven't seen many better TN panels. Once my girlfriend's monitors begin failing I might upgrade and give her mine but, until then my desk can only comfortably fit 24" monitors. I am not dropping another 2 grand between monitors desks and mounts and what not to make 27" ones happen.
