Upgrading my "old" i7-6700k pc :)

Thanks for taking the time to help me out a bit  I do have a deeper understanding of computers, been handling them ever since Windows 3.1. But I'm nowhere near an expert as it just changes so darn quickly these days..
I'm a streamer with currently 300 something followers, but I see my pc maxing out sometimes. After overclocking my i7-6700k to the safest max I've gained some room, but still.. It's not perfect. More details down below!

Budget (including currency): €2000

Country: Netherlands

Games, programs or workloads that it will be used for: 

• OBS Live 
  • Greenscreening and transitions are the worst part right now
• Canon EOS software
• Minecraft (Client only, server running in the cloud) with at least optifine and a texture pack
• Beat Saber (VR) on Oculus rift (CV1) with 3 sensors
• Spotify
• Chrome (gotta need that RAM) 
• Chatty (IRC style chat for Twitch)
• Photoshop
• Adobe Premiere Pro
• Adobe After Effects
• Discord

I'm currently rocking a solid pc for a couple of years now, but it's giving me a liiiittle bit of struggle. 
CPU: i7-6700k (Overclocked to 4.6Mhz)

GPU:  Inno3D GeForce GTX 1080 Ti ICHILL X3 Ultra

RAM x2: Kingston Technology HyperX FURY 16GB 2133MHz (Total of 32GB)

MOBO: Asrock Fatal1ty H170 Performance <---- Biggest mistake tbh

PSU: Antec 0-761345-05075-3 power supply unit (750 Watt)

SSD x2: Samsung 250GB 850 EVO (One for Windows, One for VR games)

Storage: Toshiba X300 5TB (Just general storage)

Case: NZXT H500i Midi-Tower - weiß Window (Love love love this case!)

AIO Cooler: NZXT Kraken X62 (Thinking about the new Z serie with display)

 

As a streamer (even a small one) I am rocking a poop ton of external hardware so I absolutely need my USB ports. 

Sound: Focusrite Scarlett 2i2 with XLR Rode Podcast microphone

Sound 2: Logitech G933 headset

Camera: Canon EOS D7 through USB (No canon cam link yet.. )

Screen x2: DELL Professional P2416D 23.75" (yeah yeah I know, low fps but it makes up in the 2k format for me..) (I am open to suggestions outside of the build)

VR: 3x Rift external sensor

VR: Oculus rift CV1

Keyboard: G. Skill Ripjaw RGB Mechanical

Mouse: Logitech G502

Extra: Fingerprint reader for easy login

Extra: Xbox wireless dongle

 

So already with a usb 3.0 hub i'm rocking a solid 11 usb ports. That is without any usb stick or external HDD

Probably just get a 3900X + 32GBs of 3200mhz CL16 RAM, and maybe some X570 board

 

total is like under $1000 for that stuff

 

no need to upgrade the GPU if you have a 1080ti
