The power supply should be fine.
But what I really should point out is your CPU of choice
I would recommend getting the Ryzen 7 3700X with a beafy CPU cooler and overclocking it slightly.
Its a similar case to the Ryzen 7 1800x and Ryzen 7 1700x
i'm still rocking my Ryzen 7 1700x at 1800x speeds!
