This is current UK pricing:

I want to see, based on the average of x modern games (say, 10-20), what gaming performance is expected from the above.

Any suggestions?

Well it certainly also comes down to the fact what GPU , what Ram etc. is built in the specific system. 
Performance/money wise I'd say the 3700x is best suited. You have nice gaming performance , good GPU provided, and good multicore performance if you decide to stream or do some heavier work with your rig. 
A slight hint on performance can simply give you Youtube. Many videos up with different CPU's paired with different GPU benchmarking / playing modern video games.

just do some XXXX vs XXXX searches on Youtube or even the internet and you will be able to find what your looking for.  Also even with the reviews that are XXXX vs XXXX they tend to test 4-5 different processors.

 

However to rank them for you.

 

9900KF(if overclocked)

9900k (if overclocked)

9700k (if overclocked)

3950x

3900x

3800x

3700x

 

I am not sure where the 9900 and 9700 fit but I don't think they beat out the Ryzen processors since they can't be overclocked.  Couple other things of note.  On the higher, overclocked end, Intel tends to beat Ryzen in pure gaming FPS by 5-12% but keep in mind you have to have a pretty beefy cooler to overclock the intel chips.  As far as the Ryzen chips, in pure gaming they really are only a few FPS apart in most cases.  In fact I would bet there is less than 5% difference in performance between a 3700x and a 3950x in 98% of the game currently on the market.

Generally at 1080p and gpu unlimited the 9th gen Intels are 10-15% faster than any of the 3rd gen ryzen chips. In some cases there's no difference and in some rare instances the Ryzen series perform better.

 

At 1440p+ it's more or less a wash.

 

It's the same state as 2nd gen ryzen just less pronounced.

Yeah I always forget 1440p and 4k performance because I game at 1080p.  Still I think the Intel processor, when overclocked, have a slight edge over the Ryzen processors at 1440p.  At 4K there is zero difference between any more them so the only thing your buying is potential future proofing though I am thinking even that will be a minor consideration at 4k.
