Hi, i have a asus x470 gaming f and 2 samsung 970 evo plus 500gb. I am using one for boot and the other for games that i like to fastload. 
The main one is running at pcie 3.0 4x and the second on pcie 3.0 2x.

Should i use them in sata, and use the boot one at 3gbps and the one for the games at 1gbps?
Or should i raid them? Will i get 3gbps?

I used to raid them and in the benchmarks i used to get 3gbps but to me it doenst make sense.

Why would you use NVMe SSDs via SATA? Not only that doesn't make sense, but they're incompatible afaik.

Purify your Windows 10/11, don't give Microsoft anything that you don't want to share.
