Hi, this is my first time building a PC, and I'm not sure what parts would be the best for me, all while fitting into my budget. (Sorry if I'm sort of a "tough client")

Getting the important basics out of the way; I live in Melbourne, Australia and have a target cost of around $1000AUD but I can go higher (and pretty much have to for what I want) up to about $1500AUD. 
I'm aiming for something that can play most current games at at least 60fps 1080p on mid-high graphics settings, but I would it like to be able to handle 144hz 1080p at mid settings too for if I can get my hands on a 144hz monitor in the future. 
Here's some of the games that I want to use this system for, and what performance I want with them in no specific order. 
(Note; I can be a quite lenient with all of these, if it won't be able to run what I want with that performance, then that's not too much of a problem to me.)

Borderlands 3: This is probably the biggest one for me, I'd like to experience this at 60fps, 1080p, with mid-high setting.
No Man's Sky: I'd like to be able to run NMS at 60fps 1080p on mid-high settings, but I can settle with lower frame rates if that's not possible. 
Rocket League: I would absolutely love to be able to Rocket League at it's highest settings at 60fps
Risk of Rain 2: 60fps, 1080p, high settings. 
Apex Legends: I probably won't spend too much time on Apex, but when I do, I'd like to be at 60fps, 1080p, high settings.
Subnautica: Below Zero: I don't know how demanding this game is, I assume it's not too much, so I'll say, 60fps, 1080p, high settings.
Astroneer: Highest settings, 60fps, 1080p. 

If possible at this price point, I'd also like it to be VR capable. 


I think here's where things get a bit more complicated, because I don't want this to be just capable of gaming, I also want something that can handle some decent video editing, like fancy schmancy After Effects stuff, not Michael Bay levels, but like entry level video editing stuff. 
I'd like it to be capable of decent screen recording and streaming.

 

I have a mouse, keyboard, and headset covered, so no need to include the costs of that into the build. But, I do not have a monitor, and am looking for a decent 60fps 1080p one. 

Hardware Preferences & Other Notes:


I'm happy to compromise wherever completely necessary. 

While I wouldn't call myself an "Nvidia fanboy," I am familiar with Nvidia, and am very hesitant to use an AMD graphics card, though when it comes to CPUs, well despite my sole experience with Intel, Ryzen has become way more attractive since my research. 
I'd highly prefer 16GBs of RAM, at least 1TB of hard drive storage, and at least 240GBs of M.2 SSD storage. 

I would also like the PC to have at least some sleek stylishness to it. Basically, not a complete "no dollar wasted" build. Preferred colours: Red, Purple, Black, and/or White. (Don't put the purple and red together though, I don't think they'll like each other much)


I don't plan to be overclocking this system at all. 

My current PC is the Dell Inspiron 15 3000 series. It's become slow and unresponsive as hell after the years, and basically anything that can get into full working order in under <15 minutes after a restart will be a lovely improvement. (CPU: Intel Core i7-5500U RAM: 8GB (DDR I dunno) GPU: GeForce 840M)

I'm currently looking at the Ryzen 5 2600, and the GTX 1060, or the GTX 1660 Ti. Those good? 

Sorry for having such a long post and for it being a bit all over the place, but I'm hoping that all that minimised the questions you may have.

What does your used GPU market look like? As if you can find a Vega 56 or 1070ti cheaper than the 1660ti that'd be a good deal, as they're both faster than the 1660ti.
 

And/Or a really cheap RX 470/480/570/580 which is still fine for 1080p gaming

As 1080p 144hz displays are around $250, could almost fit it into that budget

But I did just take a quick look at eBay (I don't know the best sites to go to) and someone's selling a used MSI Armor 1070 Ti 8GB with a 1 bid of $300AUD, 
There also seems to be a used Gigabyte RX 580 8GB for $200AUD plus free delivery. 

These seem like some pretty damn good deals to me.

The Armor cooler would just run a bit loud/hot as it's kind of small, it's more like a 1060 cooler, least it's not as bad as the 1080ti armor.

Ebay has tons of buyer protection, and it's pretty hard to actually break a GPU from normal use.

 

The RX 580 8GB has like 75-80% of the 1660ti's performance. Should be fine for 1080p 60fps at high settings rather than ultra in border lands 3, the older games wouldn't be an issue.

Seems like BL3 isn't well optimized. Any older games shouldn't have much issues running above 60fps at 1080p.

 

And depending on when you were going to buy the PC the RX 5500 is coming soonish.
