Ok, this will sound a bit thick but I've googled it and can't get a clear answer. 

 

I'm new to android and need to do a full backup, of everything. I want to keep my full res photos and all of my app data and messages if at all possible. On iPhone it was very simple and I'm looking for an android equivalent. Can I just plug the phone into my PC, copy the data across then be able to copy it onto a replacement phone?

 

I have a OnePlus 7 Pro if that information helps.

It says to get the entire andorid SDK, but in my opinion that is just unnecessary. You can get a minimal version which only has ADB and Fastboot here: https://forum.xda-developers.com/showthread.php?t=2588979
