Sandisk has always been a reputable company and they are now owned by WD, a long-standing reputable maker of HDDs, so no concerns there.  However, just because they're not trash doesn't mean they're the best.  The performance will be fair but not market leading.  As for the one that apparently has no onboard DRAM cache, it (like all drives lacking a cache of this nature), have some serious downsides: they will be slower and wear out faster, however, they will also be cheaper, so depending on your usecase that may be acceptable, or a deal breaker.

Sandisk is good, one of the early players in the game, they are tier 1 producers.

Should i just wait for Black Friday and then grab some MX500 or EVO 860 deal? I can wait.
Looking for 1TB for STEAM and EPIC stuff.

If you're looking for a game library, it's probably wise to get something with DRAM.  The MX500 line is a solid performer and decent value, while the EVO line has always cost noticeably more than the competition, but with segment-leading performance.  I would recommend waiting to see if you can get a good deal, yes, since it's not that long now.
