Choose any board, that you like, fits in your case (take into account form factor) and the features that you care about. Just look at Z370 and Z390 boards (Z370 will need a BIOS update to use 9700k CPU) and find the one you like. They are perform more or less the same. Just the features differ - OC capability, power delivery, M.2 port count, USB port count, audio setup, RGB, fan headers, BIOS options etc.
