Without blinking grab the 2600 and I would think about 16GB of RAM as that can be a bottleneck.  Also I hope your running SSD and what not.

which gpu? resolution & fps is your target?

mid- low end gpu makes no real diff for both cpu.

Definitely 2600, as it is more recent, faster, more efficient, and still can get a good support.

 

Either way, make sure your motherboard supports whatever CPU you are about to install. It looks like this motherboard supports both options.

I was planning on just using the apu, until I can get a good gpu. Or I could just use a 2200g and gtx 1050. I may be able to temporarily use the gt 1030 that I have

If you are going with Ryzen, then go for the 2600. IF you get the 2600 you need to get memory that is 3200. Ryzen 2000 series scales dramatically with memory speed. And I would recommend at least trying to hit 12 to 16 GB of memory if possible. Games are starting to eat up a ton of memory.

Couldn't I get the say 2666mhz then just overclock it to 3200, I mean the 3200 is already overclocking both the memory and CPU right?

Assuming you find a kit somehow guaranteed to OC to 3200MHz CL16/CL14, yeah. You'll probs much better luck pushing a 3000Mhz kit to 3200 than a 2666Mhz one though. But the price difference between 3000 and 3200Mhz kits is basically nothing, so I'd just get a 3200Mhz kit at the lowest CL rating you can (CL16 is fine, CL14 is best).

the ryzen 1600 and 2600 have both no APU. You need a seperate GPU for the monitor to display something. 
The 2200g for example has integrated graphics but less cores/threads and clock as a ryzen 2600. 
Still would go for the 2600 and a low-mid-depending on your budget card. 
16GB of Ram is never a bad thing to have esp. if you wanna be somewhat futureproof. 3000Mhz should be good to got. 
I use vengeance 3000mhz ram + 2600 + rtx 2060 and cant complain a single bit for 1080p.
