Gaming and Workstation Advice + Cooling Solution

Greetings!

For the first time in my life, I have an ability to allocate around 2.500$ (3.300 CAD, 2250 EUR) to a build. It is not a small amount of money for me, but having a powerful computer is pretty much a dream, and since my job (graphics engine programmer) is entirely PC-based, the price makes sence. (Basically, it is a similar purchase to a car for someone with a long commute, since I mostly work from home.)
I really want to make the best value from my money, and, while I do know quite a bit about the technical details of SOME components, I'm not confident in my knowledge of the market.

Gaming matters for me, but rendering and heavy computing performance are important too. The component which totally sacrifices one for another (for example, a server CPU) probably won't work for me.

Also, I am totally oblivious on the cooling/case side, so I didn't even include my ideas for those, hoping that you can help me understand what does and does not matter considering my specs and what the best options might be.

Thank you very much in advance, this means a lot to me.

Here are my ideas:
CPU: Intel Core i9-9900K / Ryzen 9 3900X

Motherboard: ASUS ROG STRIX Gaming (Z390-F/x470-F, depending on the processor)
RAM: DIMM DDR4 G.SKILL 4x8Gb 3600MHz
GPU: RX 5700XT
SSD: Samsung 860 EVO 500Gb
PSU: GamerStorm DQ750-M 750W
Monitor: Acer Nitro VG271Pbmiipx

Get a 3700X. Almost the same performance as a 9900K but much cheaper, uses far less power, runs MUCH cooler (the i9 is a space heater) and will allow you to get a 2080 or 2080 Super with the saved money. The 3700X also comes with the excellent Wraith Prism whereas the i9 needs an expensive cooler to keep it from overheating

Also, get a good power supply. The one listed above is not remotely good and may end up killing components. Something like the Corsair RMx 550W or Be Quiet Straight Power 11 500W. Your system, provided it has the 3700X, would only need about 350W under load. No point in anything over 550W since even with the i9 you are looking at 450W maximum.

Lastly, 2x16GB sticks would give you better stability for your DOCP/XMP settings.
