I see there is sort of dongle like charging base with magnets. I'm assuming it's wireless, but is it Qi standard or some proprietary thing? Could I just drop it on the Qi charger I'm already using for my iPhone? I don't want to have bunch of stuff connected all over the place, just one Qi pad and that's it.

The Apple Watch Series 0-4 all use a proprietary charging standard, not Qi. I'm assuming the 5 is the same since Apple made no mention of Qi.

I was expecting it supports Qi since it was all over the place how you can charge it on those charging pads (that even Apple discontinued later).

The standard that Apple uses is based on Qi, however they've altered it so it doesn't work with normal QI chargers. The charging pads that support the Watch are made to do so specifically, and Apple is even killing support for those in newer versions of WatchOS.
