This will probably be the best setup and well within budget. I was just thinking that if the PC will only used for gaming wouldn't a Ryzen 3600/3600x be almost as good for 30-40% price reduction ? The 3700x with 8c/16t will of course be more future proof.

it would roughly be the same, but you still have the money to spend, so why not.

For pure gaming PC Intel is still slightly better than AMD (very slightly). If you want Intel go for  i7 9700k, 16gb 3200mhz ram + decent mobo (something like asus z390-f) this would cost about 700-750eur. You need 8 thread cpu (or better) so do not go for an i5. But AMD is still better price/performance and almost as good for gaming (it is very close to be the same performance in gaming).

so if i was to go for the 9700k, would this mobo work? ASUS PRIME Z390-A

Definitely. The Prime Z390-A is a good mid-range mobo.
