to pack all the components into such a slim form factor you need to solder everything down to the mobo. there isnt enough space for slots and connectors. 

 

you can get laptops that are much more customisable (alienware area 51m) but those are way bigger, thicker and heavier.

 

PS, this is a very old topic and there are many videos that can explain this better.

I know pauls hardware did a good one on this.

 

you can only change the basic stuff like storage, wifi, ram, and sometimes the display.

Of course you can. You'll just need the skills to design a mobo from scratch, develop your own or buy the BIOS, then all the equipment and skills to handle soldering BGA-packages with hundreds of pins on them, not to mention machining aluminum - parts for for the case, injection - molding the plastic parts and so on...
