2700X or 3600 better for entry level workstation?

I am upgrading my pc this fall because my fx system is failing. I want to rebuild it to be an entry-level workstation and am not sure if the 2700X would be better with more cores or the newer 3600 would make more sense.  I plan to reuse my Phantek P350x case as well as my h100i AIO(I have AM4 adapter already) corsair CX750M power supply and my GTX 1060 3GB graphics card(yes I know bad choice but was what I could afford back then). Would the 2700X be better purchased with more RAM or would the 3600 be better with like a B450 or 470 board with more RAM(I don't really have use for the new PCIE4 yet). I want to learn machine learning and AI as well as do forensic work on it and as far as gaming goes I don't need the best FPS but I do want to do VR with the system. My budget for upgrade is only around $500-$600 so that is why I am sticking with AMD.

16GB ram also sufficient for VR and wrking. make sue its 300mhz. because the Ryzen rely on Ram speed a lot

Oh, that's good to know I was thinking I would need 32 to 64GB Thanks ^^. I was looking at this for ram                 Corsair Vengeance LPX 16GB (2x8GB) DDR4 DRAM 3200MHz

It depends very much on the workload. 3600 has much faster AVX units, so if the software uses that, it could be a LOT faster on the 3600 than 2700X. Personally I'd take the 3600 over the 2700X as there so many improvements in it.

It depends largely on the workload you'd be doing with it. 

Cinebench simulates what a tiled render using something like VRay would use.

The 3600 is just barely behind the 2700X in that regard (impressive, since it's 4 threads light.)

 

I'd grab the Zen 2 piece, personally. The ability to manipulate the Infinity Fabric to create synchrony with your RAM is a very neat tool (even if you never use it... It's there.)

Linus' recent video indicates that by manipulating the IF on your chip, the effective difference between 2133mhz and 4000mhz RAM actually becomes insignificant. 

That said, newegg has some great deals on 2x16GB kits of 3600mhz currently.
