i7 8700k or i7 9700k

Between the two? I would take the 9700K. More actual cores is usually better. Your better bet is going with the newly released chips from AMD as @Jedibrysen mentioned. Save the money and put it into a better GPU, more RAM, bigger disks (if you want to replace what you have), or just pocket the savings.

Alright, forgot about the Ryzen 3000 series being released today.
