Suggestions for OS to run on a server

I've got a PC laying around that has a i3 3320 and 2x2GB RAM sticks. I'm planning to use it as a server that I would power on when needed since I have an Orange Pi running 24:7 with media, vpn and file server applications that is much more power friendly. So far I want to run Plex on it and maybe run some VM as an experiment. Wich OS should I use? Should I choose a Linux distro, Windows server or even BSD?

I'd probably run Linux on it; Lubuntu is a good start

If it's gonna be a server, then why the DE? That's just a waste of resources.

Ubuntu Server would do just fine...

Be safe, don't drink and sudo

Laptop: ASUS K541UA (i5-6198DU, 8GB RAM, 250GB 850 EVO) OS: Debian Buster (KDE)

Desktop: i7-7700, ASUS Strix H270F, 16GB RAM, 128GB SSD from laptop, some HDD's, iGPU, some NIC's, OS: Debian Buster (KDE)

I would run this with the intentoin of learning Docker - allows you to compartmentalize your applications without wasting RAM on overhead through VMs.

linux (debian or ubuntu server, no desktop environment) as any decent server. You can access it using ssh and configure it pretty easy.
