750W PSU is it enough?

You have more than enough with a 750w

I have parts for a build arriving in dribs and drabs. But I assumed that a 750W psu would be more than enough. 

 

I got myself a Vega 64 and a Ryzen 7 2700X. Both of whom love power. Would I be running close to the edge or will this psu flat out fail with this power load?

Yeah, that's what I figured. The box for the GPU said 750W minimum and that made me worried.
