Maybe get an IPS panel, because newer IPS monitor have good refresh rate and response time but didnt leave out the color accuracy maybe getting a good 27" with 1440p is a good starting point rather than 2 mediocre 1080p monitor for me. so down the line you can get another panel with better specs or better price its your option
  2. I'm using 7600k and feels it good enough for 1080p30 streaming but you need to sacrifice some frames when you also opening other stuff in the background that require your CPU I'd recommend you to get ryzen instead cause unless you get really good deal with the 7600

Yes, just do your homework and research the performance for each option just remember getting the newest graphic card or CPU usually comes with early adopter bug and random crashes where stuff wasnt really optimized for that hardware, usually get better overtime but if your consideration are stability usually stepping down one generation yield better price to performance. but if you like to the the new flashy card go ahead, as long you are happy with the card and enjoy the dopamine rush

  7. if you can wait for a bit, you should wait for new Zen 3 so if you're in a limited budget you can cramp more with same budget by stepping down 1 generation for a price cut. for GPU you're already on the right step but just remember to wait for review for independent reviewers or actual users
