You can just go to save as in word or powerpoint and select pdf in the dropdown. That or you hit print and select the print to pdf option in the printer list.

If you buy the card now it will be outdated by the time you end up building the system and you end up with far worse hardware for the money.

There shouldn't be any sort of damage as long as you don't store it in wet or high temperature areas.
But why would you buy a RTX 2070/80 now and let it sit around for two years?
You would be better off buying a RTX 3070/3080 in two years rather than spending your budget now on a 2000 series GPU

Just 'letting it sit' won't be a back deal, provided it's not in a particularly humid environment.
I wouldn't recommend doing it though because:
1. You would want to test your graphics card, so you know for sure it's not a DOA
2. You don't know if the graphics card is still the right option for you in two years (there may be newer better options out there)

No need for those boards you listed. They are expensive for the sake of being expensive. They aren't magically better your cpu will perform the same in the board I listed as in these you listed.

You dont need to defrag SSDs because they dont really suffer slowdowns due to file fragmentation. Also its will reduce your SSDs life as it will write more than necessary to it.

No? It's literally just regular ram with a rgb strap on it basically. Just get normal ram if you want better ram and don't want to spend a lot of money. Upgrading to rgb isn't a thing. It's a cosmetic change there is no upgrade.

It does but that is like a 2-3% performance gain which again isn't really much. That and even if you had the best possible cpu in your laptop it would still have issues with running beam ng due to the physic engine being very cpu heavy. I really would not do this at all. It's the worst possible solution for a gamin capable machine really.

Last I recall, game mode was for threadripper because it has so many cores, and it became obsolete when more sophisticated boosting behaviors were introduced.

Beam ng is very cpu heavy too and a first gen core I series cpu is not exactly good for it either.
I'd say the best course of action would be sell it. Rugged laptops tend to sell for a decent bit of money and then out of that construct a system.

We cannot know really. Because well every setup is different all I can tell you that these games should give you at least 60fps except apex at ultra as that is very demanding with it's rather dumb ultra settings.
Best you can do is look up your gpu and specific game and loop up MULTIPLE reviews of the game at the settings you desire. Why multiple well often people lie. Like a lot. Why? Because oh hey my card gets good fps so lets like which then boosts the video and more people see it which then in turn might generate them some add revenue if lucky.

Changes:
The 120mm aio is well sorry for my language but it's shit. The hyper 212 is a fair bit better than it.
Changed the ssd to a cheaper one saving you money and it will not impact any performance what so ever
Made the ram faster as that will give you a little bump for a little bit more
Other changes you can do:
Lower wattage psu as this is super overkill
Questions:
Why the external drive? I hope it's not for game storage as it's not made for that. It's a slow 5400rpm drive.
Edit: @Downkey Did a far better job than me and even managed to get a 3070 in there.
