    • Lightly done, just bearly coagulates. Some egg white still flowing.

I always interested in how people like their eggs done, it can get very different from person to person. Even in my own family there's a big range of opinions on eggs.

My perfect egg would be double sided, poked yolk, thoroughly done with a dash of soy or fish sauce.

why everybody post the spec of their rig here? i dont! cuz its made of mashed potatoes!

I hate eggs but if I am going to eat it, it has to be scrambled, very well cooked and has to be spicy.

I mean, it really depends on what I'm eating. If I'm just having eggs, I'll usually do an omelette or I'll make a few of them sunny side up with a side of white toast and tomato (or hash if I feel like making it). If I have some mushrooms or salmon, I like doing a really creamy UK style scrambled and serving it on a nice bed of rustic bread and if I have steak and eggs I like a more simple American style scrambled eggs with a side of texas toast and some homefries. I definitely hate overcooked eggs though so I don't want them grey and hard. 

 

I'll poach eggs on occasion as well and serve it with some smoked salmon, red onions and capers. Usually on top of of a nice brioche or on some sliced french bread like a crustini of some sort.

 

 

 

As for seasoning, salt and pepper is all you need. I'm not a big fan of adding onion powder or garlic powder as I find it quite overbearing. That being said, I don't mind a little scallion or chives in my scrambled but it's not required.

Don't get the focus on the white when the yolk is the important part. To me this has to be intact and runny. Must not solidify at all. As long as the white isn't totally raw I'm ok all the way up to crispy.

 

I have heard that in catering you can buy egg yolk in a carton. Some day I will get that and drink it.

2 eggs in a mug (scrambled), cooked for 45 seconds (or more if it's not cooked) then add salt and pepper to your liking.

I don't like eating oily food, so this is good substitute. It's also more convenient, imo.

So it's mostly a convenience thing then? Do you find eggs oily otherwise? If your eggs are coming out oily from a pan then there is too much cooking oil/lard/butter going on IMO. Plus in the microwave you're lining your mug with oil anyway so it's more or less the same aside from less pans and maybe a minute and half less cooking time and less heat control, no?

 

That being said, I could see microwaves being good for eggs if you need some in a pinch and don't feel like going through the whole rigmarole. I was moreso wondering if that was your preference because you enjoy it that way or if it's your preference since it's quick and laissez-faire.

i just crack em and pour them into the pan, stab the yolk a few times, lightly mix it in without beating it, flip when done with that side, cook other side, put on biscuit with sausage

I get the egg whites (colored yellow) in a carton. It's much less messy than breaking hen fruit shells. One way I cook them is to coat the inside of a paper bowl with butter that comes mixed with olive oil, pour in some of the egg white, then nuke it in the reactor for however long it takes to get done firm but not dry (I vary the amount I nuke from time to time). The egg white will literally foam up like a soufle but, once finished, it will collapse back down. The result are fluffy eggs with no mess to clean up and a dish to wash afterwards.

 

If I'm in the mood for an omelette, I butter/olive oil a paper plate, pour on a thin layer of eggwhite onto the plate, nuke in the reactor until cohesive but not quite done, add the fillings, fold, and nuke again just long enough to warm up the fillings.
