Goal of this build:

Build the best gaming/workstation desktop possible for $3500. This includes:

·         A computer desk made of walnut wood

·         In keeping with my house aesthetic = Wife Approved

·         Hardline watercooling

·         Raid Cold Storage 

·         Decent audio for occasional video/audio editing

Why not a 8th gen coffee lake system instead?

True going with dual 3 Tb WD Red Drives in RAID-1 to just store files and games. What's your suggestion?

I agree would have loved to pick up a Titan XP but got a good deal on the 1080's (height of GPU mining) and the used market seams not to have a ton of XPs at reasonable prices.

Just cost as far as 8th Gen would have to get a Z370 boards as well.

8th gen CPUs are a lot more powerful than 7th gen CPUs so if they costed the same, you should've bought those.

If you are woried about long term stability i only can tell you about 6 year old arctic silver 5 (not the best performing tim but should be equal compared to the graphite).

I ended up getting a My Book Duo for cold storage and will just use the SSD as boot and a 3tb as my scratch drive. Unfortunately, the aftermarket for 8th gen CPUs its still in the $300+ for an 8700k. Maybe in a year or so will upgrade to 8th gen and 370 board. Still want to stay below the $3500 for my build + desk.

Well its finally done.... For now.... Thank you everyone on the forums for your help and @LinusTech for the build inspiration and for signing my wafer at LTX. Was able to get the entire LTT team, Gamers Nexus, JaysTwoCents, BitWit, Pauls Hardware and Der8auer!
