Not sure why you're asking this because it seems obvious, but here goes. Here are the main 3: 

  • App compatibility 
  • Security and bug fixes
  • More features. Heck, you can't even set a home wallpaper on iOS 3.

Siri is a big one. The new UI from iOS 6 to 7. App switcher changed a lot. A hell lot more secure than it once was. Performance tweaks. And I believe that was a time when Youtube was still shipped out as a native app. 

Edit: almost forgot about the notification center. it's a hell lot different today

Almost everything except it's still IOS. There are too many things to list
