You would need a pre-pro or an actual receiver with pre-outs. See something like Denon's X3000 series or better for an affordable device with HDMI inputs and RCA pre-outs.

Is there a device that allows for audio to be pulled out into  5.1 channels in rca format while still allowing the video to be outputed. I am trying how to use a 5 channel amp and use it as a receiver.

Don't know the quality of that thing, seems rather cheap, but might work for you?
