will I notice any any difference in colors and graphics

if I upgraded from

xerox xm7-22w 1050p

to

Dell Gaming S2716DG 27 2k 1440p

There will for sure be differences. 

 

For colors, you can still adjust them, which I do as soon as I get a new monitor.

 

As else, if your gfx card is able to fire the new display with enough performance again you will have a nicer immersive gaming experience or watching a movie at your desk experience due to the bigger screen =)
