How and where could I find the pinouts of an EVGA NEX 750G and Corsair HX750i Psus so I can make some of my own custom cables. I've tried for about an hour and can't even find the maunals for either from my boxes or the online manuals.

check the manual? who knows what's hidden in that table stabilization piece :P 
or you could use a multimeter and figure it out? 

Have you tried to perform a sudden temporary interrupt of the electricity flow to your computational device followed by a re-initialization procedure of the central processing unit and associated components?

CableMod is a company that makes custom sleeved cables for PSUs.

If they make the cables, they need to know the pin-outs, too.

In lieu of actually getting pinouts, you can verify this yourself with a multimeter and the fact the plugs on the device end are standardized. Even better if the wires are color coded (but I figure most of them aren't because it doesn't look good). Otherwise, trace what the pin on the device-end is supposed to deliver and go back to the PSU end and see where it goes. If you want to verify, poke the pin with a multimeter to check the voltage while the PSU is on.
