She doesn't adequately address what the eye is capable of, all she has shown is that you can see more mouse cursors on a higher rate monitor because the monitor can display more.  That doesn't actually prove anything about the human eye or it's perception.  Which quite frankly is a laughable matter with the number of tech enthusiasts and gaming websites who think they know more about the eye and the visual cortex than educated specialists.
