What PSU should I get?

Max wattage is about 800W, fully modular, efficiency greater than gold and less than 170mm in length

Powering 1700x + 1080ti water cooled system. Also if anyone knows the difficultly of their wire management on the cables that would be nice for custom cables.

1700 and a 1080ti will only need 650w psu. I'd say EVGA supernova G2 650/750W, depends on price difference. Otherwise Seasonic equivalent will also work.

SeaSonic G 650W is Gold rated, semi modular and have the most needed cables

or if you want newer PSU the Focus Plus series is tend to replace SeaSonic G which i mentioned before, with fully modular it is nice too. 

Their upcoming airtouch PSUs is amazing too, comes in 80+ Gold and five different fan profile its wattage is at 700 and 800W

A 1700X and 1080 Ti with watercooling will never breach 450W under peak overclocked load. Absolutely no reason for an 800W unit unless you want to SLI.

 

An EVGA 650G2 should do nicely for you. Lots of custom sleeved options for that PSU too. Corsair's RMi and RMx are good options too.
