What are benefits of servers?

This isn't my area of knowledge at all, so I'm wondering what are the benefits of personal servers.

Mainly, what are some fun and interesting projects that can be done with one?

I own a low-end one. It's a fileserver, storing backups of my machine's primary drive (120GB) and my parent's primary drives (128GB/250GB SSDs). Also runs Plex for Netflix-like movie and TV show cataloging and Transmission for torrent downloads. Back when Pokemon Go was in it's popular stage, I had a map and bots running on it. I also use it for Steam game trading card idling.

idk
