Triple monitor odd help

Hi so I have a 27" 1440p 165 Hz monitor as my main display but am thinking of running 2 1080p 27" 60 Hz displays along side. Specifically for iRacing but I do not have the money to get 144hz displays. Will be looking at getting the cheapest ips displays possible hopefully around $200ea.

Now if I do this can I use DSR factors on the 1080p monitors to make them 1440p? Will this add latency to the Already slower than ideal speed of the 1080p monitors compared to the quality main display? 

 

 

TLDR; can I use DSR factors on only 2 1080p displays to match my 1440p display?
