I would go for ultrawide curved, because if you do dual monitors you'll have a bezel right in the middle, and the ultrawide is curved.

I mean the dual monitor is good if you have one for gaming and one for streaming etc, and a con of ultrawides is that some games don't support it and most movies/videos don't either

But all in all I say ultrawide

I like a 16:10 aspected workspace, so if an ultrawide had an aspect ratio of 32:10 (16:5) and could be split into 2 separate areas, clearly that. If not,  I would pick dual Dell U2415's because they are gorgeous and have very little boarders.

I prefer multiple monitors over a single ultrawide. An ultrawide is better for gaming on a single screen, and certainly better than spanning games across two monitors (since the separation between the monitors would be in the center of the image), but no one buys two monitors to span games across them, for that exact reason.

For everything besides gaming I prefer multiple 16:9/16:10 monitors over ultrawides. People talk about running multiple programs on ultrawides but It's a very theory-driven argument and I don't think many people actually do that. Window management is more annoying since you can't use the maximize button or drag the title bar to the top to fill the screen, you have to size it manually or use Win + Arrow keys or something like that, and sometimes you misclick and drag the window around and have to drag it back, because it's not maximized so it's not locked in position, it's just a pain in general. And when you split an ultrawide in half it's equivalent to two 5:4 monitors so... would you rather have dual 5:4 monitors or dual 16:9 monitors?

It 100% should be determined by HOW you're going to use your monitor.  I have an ultrawide that I specifically purchased for gaming.  Any other usage I would prefer two monitors (I do have a second cheap 1080p monitor connected just for other windows/work).
