i7 5820k + 2x gtx 1070's vs i7 6900k + 1x gtx 1070

Ok... You are gaming. You need FAST CORES not 10 slow ones. Games only use 4 maybe 6 but not 10.

5820K, it is a beast. At 4.5GHz, it can match the performance of a stock 5960X. And, btw, those 8 and 10 core Xeons are very weak per core and an overclocked 5820K can match their multicore performance.

Yes. A stock 5960X. An overclocked 5960X absolutely destroys it...

Or grab the newer 6800K for Turbo 3.0, where single core apps gets the boost it needs while you still get the best performance of both worlds. Rendering and gaming.

If I get that, I'll have to go with 16gb of ram instead of 32gb (I need the ram for zbrush)

If you care about the best possible performance, then the 5820K is the better option. The 6800K overclocks very poorly. Only the higher end Broadwell-E CPUs overclock well.

Sacrifice the ram and go with 2 stick so of 16GB first, and get a 6800K. Then save up for the ram and grab another 16GB to make it to 32GB. Max ram for 5820K is 64GB at DDR4 2133. Max ram for 6800K is 128GB at DDR4 2400.

is turbo boost 3.0 really worth it? I will be overclocking anyways so I dont really need it. But the 128 gb will be helpful so I will probably go with the 6800k. Will the 6800k work at 4.5ghz with an h100i v2?

A small one. The 5820K clocks considerably higher than the 6800K though and it therefore performs better....

4.3GHz if you are lucky. A 5820K is compatible with 128GB of RAM as well.... Many people have done it.

Turbo Boost 3.0 isn't worth it as you can overclock per core....

Average overclock for a 6800K is 4.1 to 4.2 GHz. 4.5GHz is pretty much impossible no matter how lucky you are. The 6850K overclocks better, but costs much more as well...

Newer batches (Late 2015 and newer) can get to 4.6GHz. BTW, get a Kraken X61 or X62 because the H100i will be limiting your overclocks with the 5820K
