Should I buy a CPU with hyperthreading? I would like to record, stream, render videos and play games at the same time.

You may want to since those things can utilize hyperthreading well and you would likely have a bad experience otherwise (since those tasks combined are very taxing on a weaker cpu)

For work loads the 6800K for more gaming 6700k

If you mean all those things at the same time, you don't need hyperthreading, you need one of those 14-core or something.

 

But if you mean that you will play while streaming and recording, and perhaps later edit the recording and render it... you are still better off with some X99 PC with quite a few physical cores. But among i5 quad-cores and i7 quad-cores, yes, aim for i7.
