What is the purpose of connecting reservoir -> pump -> reservoir -> pump -> rest of loop?

In the picture, you can see a connection from reservoir -> pump -> reservoir -> pump -> rest of loop, what objective does this achieve?

Keeps the pump primed with fluid so it doesn't run dry. And it's just a convenient and nice looking way to run the loop, doesn't really have to be that way.

Multiple pumps in series can help with the water pressure if there are a lot of radiators, or if one pump fails the other could keep the system going until there is downtime to perform maintenance.

 

Systems like that tend to not follow much logic and add pointless tubes and reservoirs to fill up otherwise empty space.

Won't having a 2nd reservoir connected to the first pump cause a pressure drop and negate all the pressure provided by the first pump?

Yes, in the very likely event that there is any air in the reservoir. Hence the more likely situation that this was an illogical and pointless configuration solely to fill up space.

Could it still provide redundancy? In the case where either pump fails, will the water still be moving through the loop?

 

If there isn't any air, there won't be a pressure drop?

100% looks, no real functionality.

the system will 'equalize' in temperature and the extra coolant will delay the stabilization.
