Radiator: 420 x 140 or 480 x 120 ???

If you do 420 rad, you get 1319 mm^2 of fan space  (including center hub)

If you go 480, you get 1508mm^2 of fan space (including center hub)

So you get more fan space on a radiator with 120x4. There's then also the added benefit of having more fans. More fans means each one can run slightly slower and slightly quieter than if you had fewer fans, and still get the same performance out of it.

What would get me better cooling performance?

A 420 rad with 3 x 140 Fans or a 480 rad with 4 x 120 Fans?

easily 4 x 120 :P

 

edit: im a dumbo, technically they're pretty close in terms of pure space (58,800 mm^2 vs 57,600 mm^2) But I still have a feeling the 480 rad would do better tbh

This too, due to the logarithmic nature of dB many quiet things are better than fewer loud things (ex. 7x 10 dB fans is still quieter than 1x 20dB fan)

Going with the larger RAD should allow for a quieter set up.
That's the route I'd go if your case and wallet supports it.
