Folding, most specifically, refers to medical research on protein folding that's conducted on networks of computers that people have put software on that allows them to work as a cluster. Things like Folding@Home are just programs that receive tasks to perform from a server and dedicate some of your computer's resources to doing those tasks, basically like a supercomputer except spread out over the internet and using people's desktops instead of one set of servers.
It makes high-performance computing dramatically cheaper and easier to access for research and whatnot. It's not just used for protein folding, but that's one of the biggest ones and so that's what most people call the concept.
