What would be the difference on a $180 dollar NAS vs like a $1000 NAS? Besides storage.

There's a lot of factors to this...it really depends what you spend on the NAS. You can spend more on a better CPU / RAM, more storage (Or better drives), or better networking gear. It all depends.

Well I think you get what you pay for. In other words, more drives, more speed with your NAS and redundancy from the scaling. 

Drive types...what kind of hard drives you are going to get for stability/reliability.

Also depends what you want to use it for,

 

I could buy a ferrari but if I only went to the shops in it twice a week then an old Ford could do the same thing, They are purely scaled on what is required.

 

For home use and media streaming the lower end of the scale is usually fine, Small business the middle and the high end used for enterprise / business.
